Honorable Mention Banana Bread

I gave this post a cheeky title in reference to my near victory at the Nebraska State Fair when I was 10(ish). In truth, this recipe carries with it a bit of magic. Every time I pull out the card in my mother’s neat hand, I am taken back to my childhood and hours spent in the kitchen baking with my mom.

  1. 1/2 Cup Butter
  2. 1/2 Teaspoon Baking Soda
  3. 1 Cup Sugar
  4. 1 Cup Mashed Banana (approx. 2 Large Bananas)
  5. 1 Beaten Egg
  6. 2 Cups Sifted Flour
  7. 3 Tablespoons Milk
  8. 1 Teaspoon Baking Powder
  9. 1/2 Cups Chopped Nuts

Grease 9″x5″x3″ pan. Beat butter, sugar, and egg until fluffy. Combine bananas and milk and set aside. Sift flour, baking powder, and baking soda onto waxed paper. Alternate adding banana/milk mixture and dry ingredients to sugar mixture. Stir in nuts. Turn into pan, and bake at 350° for one hour or until the bread springs back when touched. Cool in pan for 5 minutes before removing.
